Chocolate Crinkle Cookies

Ingredients

  • 125g unsweetened chocolate

  • 1/4 cup unsalted butter

  • 1 1/2 cups all-purpose flour

  • 1/2 cup cocoa powder

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 4 large eggs

  • 2 cups granulated sugar

  • 1 tsp vanilla extract

  • 1/2 cup confectioner's/icing sugar

  • Double boiler

  • Large bowls

  • Small bowl

  • Sieve

  • Whisk

  • Spoon/spatula

  • Plastic wrap

  • Baking tray

  • Parchment paper

Steps

  1. Melt butter and chocolate in a double boiler and stir frequently.

  2. Remove from heat once melted.

  3. Add 1 1/2 cups of all-purpose flour, 1/2 cup of cocoa powder, 2 teaspoons of baking powder and 1/4 teaspoon of salt to a bowl. Mix well to combine and then put the bowl aside.

  4. Add 4 large eggs and 2 cups of granulated sugar to a separate bowl. Whisk well to combine.

  5. Fold in the melted chocolate and butter mixture. Mix well to combine. Add 1 teaspoon of vanilla extract and mix in.

  6. Mix in the dry ingredients mixture in small portions until all ingredients are combined and dough consistency is achieved.

  7. Cover the bowl with plastic wrap and refrigerate for 2 hours.

  8. Use a sieve to sift confectioner's/icing sugar into a small bowl.

  9. Shape the dough into balls and roll in the confectioner's/icing sugar. Place balls evenly apart on a baking tray lined with parchment paper.

  10. Bake at 325°F (163°C) for 13 - 17 minutes.
