Italian Lemon Cookies

A total classic for an Italian Christmas, these wonderful, twisted cookies are sure to be a hit!


Ingredients:

Cookies:

  • 4 cups all purpose flour

  • 6 eggs

  • 1 cup granulated sugar

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 1/8 tsp salt

  • 3 tsp baking powder

  • 1 cup vegetable oil

  • 1 Tbsp lemon juice

Lemon Glaze:

  • 1 cup icing sugar

  • 3-4 Tbsp lemon juice

Equipment:

  • Stand mixer/Hand mixer

  • Medium mixing bowl

  • Oven

  • Baking sheets

  • Plastic wrap (for letting dough sit)

Steps:

  1. In medium mixing bowl, mix flour, baking powder and salt.

  2. In stand mixer with whisk attachment (or separate bowl if using hand mixer), crack six eggs. Mix on medium for 4-6 minutes.

  3. To beaten eggs, add 1 cup sugar and mix more until combined.

  4. Add cup vegetable oil, vanilla extract, lemon and lemon zest to egg-sugar mix and further combine.

  5. Change mixer attachment to dough mixer, and gradually add and combine flour mixture. Turn dough onto plastic wrap, wrap, and chill for about half an hour.

  6. Preheat oven to 350ºF.

  7. To shape cookies, roll pieces of dough into logs, fold the logs in half, and twist each strand of dough into itself. Place shaped cookies on baking sheet and bake for about 20 minutes.

  8. To make the glaze, combine the ingredients in a bowl, and simply mix to combine.

  9. Lastly, once the cookies have cooled, dip them in lemon glaze, let rest, and enjoy!
