Mixed Berry Cobbler

Warm berries and cold ice cream on a very tender biscuit. The tartness of the berries is balanced out by the sweetness of the ice cream. The biscuit is very, very tender on the inside yet the outside is beautifully golden brown giving much-needed texture. What’s not to love? It’s also a great intro to making biscuits!


Ingredients:

  • 6 cups of berries of your choice

  • 1 ½ cups of peeled and diced pears or apples

  • ¾ cups of berry jam

  • 1 tsp of vanilla

  • ¼ cup granulated sugar

  • 1 Tbsp. baking powder

  • 2 tsp. finely grated lemon zest

  • 1 tsp. kosher salt

  • 2 cups all-purpose flour, plus more for surface

  • ½ cup (1 stick) chilled unsalted butter, cut into pieces

  • 1⅓ cups chilled heavy cream

  • More melted butter for brushing over the biscuit

  • More granulated sugar for dusting over the biscuit

Steps:

  1. Combine and mix granulated sugar, baking powder, lemon zest, salt, and AP flour in a bowl.

  2. Add the pieces of butter and coat them with the flour mixture. Break the pieces of butter until the biggest chunk of butter is no bigger than a pea.

  3. Switch to a spatula when gradually adding all of the chilled heavy cream.

  4. Working with your hands again and a rolling pin, dump the dough out onto a surface. (tip: make sure all surfaces are dusted with flour- hands, rolling pin, and work surface)

  5. Work the dough into a rough square and split the dough into quarters. Stack the quarters and roll it out into a rough square again. Using a cookie cutter that is roughly 1-in diameter, punch out small, circular biscuits. (tip: When working with the biscuit dough, work quickly as you want to keep the butter as cold as possible. Just work as quickly as you can and do not fuss. The cookie-cutter can be easily improvised from bottle caps and smaller cups with, roughly, the same diameter.)

  6. Keep the cut-out biscuits in the fridge while working on the fruit mixture.

  7. Combine the berries, diced apple or pear, jam, and vanila gently but thoroughly.

  8. Portion the berries mixture into individual oven-safe bowls and top with your biscuits. Brush the biscuits with butter and sprinkle some sugar on top.

  9. Place the cobblers into a preheated 400F oven and bake for 10 minutes. Reduce the oven temp to 350 F and bake for 50-65 minutes until the biscuit is golden. Let cool for a bit and serve warm with a scoop of ice cream.
