Sweet Potato Tart

Ingredients (for 8 tarts):
Tart shells:
150 g flour
100 g butter
3 g salt
2 tsp sugar
105 g cold water
Filling:
200 g Sweet potato, steamed
50 g sugar
15 g honey
20 g butter
1 egg
25 g heavy cream
Equipment:
Baking pan
Bowl
Cutter
Egg beater
Oven
Plastic
Piping bags
Peeler
baking torch (optional)
Steps:
Add flour and sugar to a bowl.
Cut butter into smaller pieces.
Add pieces of butter to flour.
Mix and work them into flour.
Beat the egg.
Mix the heated egg into flour mix.
Cover the mixed dough with plastic, and set aside.
Peel and chop sweet potatoes.
Steam the sweet potatoes until cooked.
Blend the steamed sweet potatoes until pureed.
Add sugar, egg, honey to the sweet potato puree.
Stir butter in the puree.
Let the puree cool down.
Fit the crust dough into the baking pan.
Pipe in sweet potato filling.
Cover the filling with egg wash.
Bake and cool.
Pie meringue on top of the tarts.(optional)
Brûlée until meringue becomes golden.(optional)
