Oven Fries

For me, comfort food is that which you crave without regard if it’s healthy or not. For me, that is fries. It should be oily, crispy, and seasoned perfectly with salt. I’ve always avoided deep-frying at home, so I always opt-out of it for other methods like oven-baked instead. Usually, oven-crisped dishes tend to fall short compared to deep-fried dishes; take for example oven-baked cutlets as opposed to deep-fried cutlets. This recipe that is adapted from Ethan Chlebowski checks all the boxes because I don’t need to deep fry my fries and it’s just as comforting.


Ingredients:

  • 6-8 medium potatoes

  • 2-3 tbsp of vinegar

  • 1/3 cup of oil (vegetable or canola)

  • Salt

  • Optional: black pepper and garlic powder

Steps:

  1. Prepare a pot of water and season it with enough salt so that it’s “salty as the sea” (how salty your pasta water usually is) and vinegar. Bring to a boil.

  2. While waiting for your water to boil, prepare your potatoes by cutting them into batonnets (you can choose how thick or thin your fries are! Try your best to cut all your fires to the same dimensions. Tip: keep your potatoes in a bowl of water to prevent browning). You may choose to keep the skin or peel them off.

  3. Once your water comes to a boil, drop in your fries. If no resistance is felt when poked with a knife or a skewer, then it’s done. Half-cooked fries are also okay since they will finish off in the oven.

  4. Preheat your oven to 450F. Drain your fries on paper towels (I usually let them sit on the paper towel for a few minutes to dry)

  5. Transfer the drained fries onto 2 baking sheets (DO NOT line them with parchment paper or foil). Add the oil to both trays, dividing the oil in two, and toss the fries well.

  6. Put the fries in the oven for 30-45 minutes, tossing them around halfway through cooking. they are done when they are golden.

  7. Immediately transfer the fries into a paper towel-lined bowl to allow excess oil to drain off. Take the paper towel out and toss the fries with salt and the optional black pepper and garlic powder. Serve and enjoy!
